Kale Chips

I made Kale chips last night, and a couple of people have since asked how to make them. They’re utterly delicious and are really very simple to make – the only tricky part is keeping an eye on them once they’re in the oven to make sure they don’t burn. Here’s what you do:

Take a bunch of kale and wash it and dry the leaves very thoroughly.  Remove the leaves from the thick stalks, then cut or tear the leaves into bite-sized pieces and place in  a large bowl. Add a tablespoon or two of olive oil and mix the leaves throughly until they’re all lightly coated with the oil. Add a sprinkling of sea salt and mix that in thoroughly.

Line a large baking sheet with baking parchment and place the kale on it in a single layer (you may need to do this in multiple batches if you’ve got a lot of kale). Place in an preheated oven (180C/350F). They should take between ten and fifteen minutes to cook – toss them gently half way through to turn them over. Watch them carefully – they burn easily so you don’t want to over do it – burnt kale isn’t nice. Once they done, they’ll be nice an crispy and just starting to brown a little.

Eat as a snack. Goes very nicely with a large gin and tonic.

Once you’ve mastered the basic version, you could try adding a little spice – some cayenne, black pepper, or a splash of soy sauce should go very nicely.
